Recipe Round Up: Easter

Another installment of Recipe Roundup for you today. As a reminder, this is a series I do in honor of the various holidays and celebrations throughout the year. I will share a few of our family’s favorite recipes that will hopefully help you plan your event.

Today we are getting you ready to celebrate Easter. The sides I selected will go great with your main course and then I shared a next day idea to use with leftovers.

  1. Berry yogurt fruit salad – recipe below
  2. Roasted curried cauliflower      
  3. Garlic hasselback potatoes
  4. Honey mustard brussel sprout slaw    
  5. Green bean ham and cheese frittata – great for day after
  6. Kombucha mimosa. If you are going to partake in a mimosa or two, opt for mixing champagne with kombucha instead of fruit juice.

Berry Yogurt Fruit Salad

Servings 4

Ingredients
  

  • 1 cup blueberries
  • 1 cup blackberries
  • 1 cup raspberries
  • 1 cup strawberries quartered
  • 1 lemon zest and juice
  • 1/3 cup plain yogurt
  • 2 teaspoons vanilla extract
  • 2 tablespoons mint leaves

Instructions
 

  • Wash berries and add to a bowl.
  • In a small bowl mix yogurt, lemon zest and juice and vanilla extract. Add to fruit and stir to combine.
  • Sprinkle with mint and serve.
