Kale Fried Rice

Servings 4

Ingredients
  

  • 1 1/2 cup cooked brown rice
  • 2 1/2 cups cauliflower rice
  • 1 onion chopped
  • 4 cloves garlice cloves chopped
  • 1 bunch kale chopped
  • 4 eggs
  • 2 1/2 tablespoons tamari or soy sauce
  • 1 tablespoon butter or coconut oil
  • chopped nuts optional

Instructions
 

  • Heat pan over medium heat and melt butter.
  • Add chopped onion to pan and cook 2-3 minutes.
  • Add cauliflower rice and cook another 3-4 minutes. 
  • Add kale and garlic, cooking another 3-4 minutes. 
  • Make a well in the middle of the pan and add beaten eggs and stir to combine and until eggs cooked.
  • Finally, add in cooked rice and tamari. 
  • Top with nuts, if using.

Notes

To cook brown rice, use a 2:1 liquid to rice ratio. Add water or broth to a pot and bring to a boil. Once boiling, add rice, reduce to a simmer and cook covered for 50 minutes. Let rest an additional 10 minutes. I typically make in bulk and freeze in 1-2 cup portions for making meals like this even quicker!
Also, feel free to skip rice completely and do all cauliflower rice.
