Melt oil in a pan over medium heat.
Add carrots and mushrooms and cook 5-7 minutes. If using pork, start browning that before the veggies and add veggies after a couple of minutes. You likely won't need to add additional oil or butter due to fat from pork.
Add in chopped garlic and ginger and cook for one more minute.
Pour in tamari and vinegar, then bone broth and bring to a boil.
Add in noodles and cabbage and cook according to package instructions, stirring regularly.
Spoon into bowls and top with your choice of toppings.
