Arugula and Watermelon Salad

Servings 4 as a side

Ingredients
  

  • 4 cups arugula
  • 1 cup watermelon cut into 1/2 inch cubes
  • 1/3 cup feta cheese
  • 1/4 cup pumpkin seeds

Balsamic Dressing

  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon salt
  • pepper to taste

Instructions
 

  • Wash and dry the arugula.
  • Toast pumpkin seeds in a dry skillet, being careful not to burn.
  • Whisk together dressing ingredients.
  • Assemble salad and toss in dressing.

Notes

To make it more festive for 4th of July - consider adding in blueberries as well. 
Easy to multiply recipe for a larger crowd.
You may not use all the dressing. Store remaining in a glass container in the fridge.
