No Sugar Breakfast Cookies

Makes 20-24

Ingredients
  

  • 3 ripe bananas smashed
  • 1 1/2 cup oats
  • 3/4 cup nut butter
  • 3/4 cup shredded carrots
  • 1/2 cup raisins
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 4 tablespoons chia seeds
  • 2 scoops collagen powder optional

Instructions
 

  • Preheat oven to 375 degrees. 
  • Mix all ingredients together in a large bowl. 
  • Add heaping spoonfuls to a parchment paper lined baking sheet.
  • Bake for 12 minutes.

Notes

These cookies freeze well in layers with a piece of parchment paper in between. 
 
The collagen powder we use is from a company called Vital Proteins. It is unflavored and works great in beverages, soups, baked goods, etc.
