Toast your bread.
Slice an avocado in half and then using a knife make multiple slits down the middle to further slice the one half into thin pieces. Use a spoon to scoop out the avocado slices. Fan out the slices on the piece of toast and gently press down.
Top with a generous handful of arugula and a few slices of radish.
Fry an egg and add on top of the arugula bed.
Finally, add a spoonful of fermented sauerkraut and a sprinkle of everything bagel seasoning, if desired.
