Mouthwatering Meal With Zero Effort

So simple yet so amazing! We love avocado toast around here. It is a really basic meal that we can throw together with ingredients we almost always have around our house. I am able to get fat, protein, veggies and a fermented food in  – so also a complete perfect plate that keeps us nourished and fulfilled. And it is toast so my kids love it because bread, right?!  We do make one modification for our boys – they prefer scrambled eggs over a fried egg.

So here goes – not really a recipe but a simple guideline to help you build a mouthwatering avocado toast that can be breakfast, lunch or dinner today!

Avocado Toast

Servings 1


  • 1 piece bread gluten free if desired
  • 1/2 avocado
  • 1 handful arugula
  • 1 radish sliced thinly
  • 1 egg
  • 1-2 tablespoons fermented sauerkraut
  • everything but bagel seasoning optional


  • Toast your bread. 
  • Slice an avocado in half and then using a knife make multiple slits down the middle to further slice the one half into thin pieces. Use a spoon to scoop out the avocado slices. Fan out the slices on the piece of toast and gently press down.
  • Top with a generous handful of arugula and a few slices of radish. 
  • Fry an egg and add on top of the arugula bed. 
  • Finally, add a spoonful of fermented sauerkraut and a sprinkle of everything bagel seasoning, if desired.
  • Enjoy knife and fork style!
