Quick and Easy Make Ahead Breakfast!

A few years ago overnight oats were all the rage. Fast forward to today and people are trying to avoid grains so chia cups, or sometimes called chia pudding, are trending. I personally don’t love the consistency of chia cups and my boys also preferred overnight oats, but chia seeds are full of omega 3 fatty acids, fiber, protein. They also play the role of helping thicken the consistency of whatever they are mixed with, if liquid is also involved. So I decided why not combine the two. Today I am going to share my take: Chia Overnight Oat Cups.

Another benefit of this yummy breakfast is they are made in advance. You assemble everything the night before and it is ready for you to eat the next morning or even grab and go to take with you, if needed. Take your prep a step further and add all dry ingredients in jars for the week and then all you need to do the night before you want to eat it is add the liquid ingredients and fruit and give your jar a shake!

Chia Overnight Oat Cups

Servings 1

Ingredients
  

  • 1/2 cup oats
  • 1 tablespoon chia seeds
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoons almond butter
  • 1/2 cup milk
  • 1/4 cup kefir or yogurt
  • 1/3 cup frozen blueberries

Topping

  • fresh fruit
  • chopped nuts

Instructions
 

  • Layer all ingredients in a glass jar and then shake up to combine.
  • Store in the fridge overnight.
  • The next morning, stir to further incorporate and enjoy!

Notes

Frozen berries work best over fresh because you get some of the juice as the berries defrost overnight.
