Strawberry Chia Jam

Today, I am sharing a fan favorite, from my Lunch Box Rescue and a personal favorite in our home that my boys often request.  

Calling this a recipe is a far stretch, as it takes no time at all and only two ingredients. Using fresh or frozen strawberries, I turn it into a jam in under 5 minutes and use it to upgrade our breakfast or snacks. 

 

Since I always have frozen berries in the freezer, this can be prepared with little effort and no planning – I call that a win!

 

We use this jam so many different ways.  I am an advocate for buying plain yogurt so you can control the sugar content. This jam comes in as a handy way to change the flavor, as most people don’t love the taste of plain yogurt.

 

You can use an immersion blender to mix the jam and yogurt together or simply stir it in, if you are lazy like me. Add a drizzle of nut butter for even more deliciousness. 

 

We also love it stirred into overnight oats, on top of waffles or pancakes, as a dollop on banana coins or as a homemade jelly for a PB&J.

 

Strawberry Chia Jam

Ingredients
  

  • 1 1/2 cup strawberries fresh or frozen
  • 1 tablespoon chia seeds

Instructions
 

  • Mash 1 1/2 cups strawberries over medium low heat, with continuous stirring so they don’t burn.
  • Turn off heat and stir in 1 tablespoons chia seeds.
  • Store in fridge.

Notes

Great on yogurt, stirred into overnight oats, on top of waffles or pancakes, a spoonful on banana coins or as a homemade jelly for a PB & J.
