Upgraded Taco Meat

My oldest son’s favorite food – beef tacos!

 

He loves them, would eat them every night and while we don’t do that, we do eat them at least once a week! 

 

Notoriously, tacos aren’t a health food but as a veggie loving health obsessed mom you know our tacos are loaded with lots of fresh flavors and veggies. 

 

The secret ingredient in our taco meat is cauliflower rice. I find frozen works great, almost better, but fresh will work too (and that is what is pictured). Frozen cooks quicker and is often smaller so if you have picky eaters that may be a better option for you!

 

Don’t forget to load up your tacos with other veggies and some yummy fats from avocado or guacamole. 

 

I included a homemade seasoning mix, but feel free to grab your favorite store bought. Our favorite clean taco seasoning, which is local to our home town of Kansas City is Riega

Best Taco Meat

Ingredients
  

  • 1 pound gound beef
  • 8 ounces cauliflower rice fresh or frozen
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon onion powder
  • 1 teaspoon salt
  • 1/4 teaspoon cinnamon

Instructions
 

  • Brown ground meat in a pan.
  • While meat is cooking, combine seasonings in a small bowl.
  • When just a little bit of pink left on meat, add cauliflower rice and seasonings and continue to cook until no pink remains. If using fresh caulliflower you may need to cook longer.
  • Enjoy with your favorite mexican dish!
